Pink peppercorns are used for their sweet, fruity, mildly peppery taste and lovely color and aroma. Unrelated to the black pepper plant, pink peppercorns are actually the dried fruit of a Brazilian tree.

Safety: In large quantities, pink peppercorns can cause respiratory and/or intestinal reactions. Common cooking quantities are not likely to cause a reaction.

Suggested Uses: Pink peppercorns are fun to cook with-- they're very aromatic (once ground), beautifully colored, and mildly fruity/peppery, but without the pungent hotness of pepper. Try pink peppercorns with fish, poultry, game, meats, salads, salad dressings (especially vinaigrettes), fruit sauces, asparagus, eggs and sauces for seafood. It even adds interest and kick to desserts. You won't want to use pink peppercorns alone in a peppermill, because they're too soft. They're lovely in combination with black and white peppercorns in a clear mill.
